I'm a legitimate oatmeal cookie monster... I only counted, as well as January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all my oatmeal cookie recipes directly there!) They are a few of the most well-known recipes on my site because they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you will start with whole wheat bread (or gluten free, if you like ) and instant oats (such as these... or these for a gluten-free edition!) . Immediate oats are thinner and smaller than conventional rolled oats, and you are able to find them at canisters right alongside those old-fashioned oats at the grocery shop.
I probably sound like a broken record by now... But cause I ? you and need your cookies to turn out perfectly soft and chewy, I'm reminding you ... Measure your yogurt and bread correctly, with this method or even a kitchen scale! (? That is the one I own and adore. It only cost $20!) Too much of either side is likely to make your cookies taste cakey or dry, instead of chewy. This is particularly true of the oats--they behave like little sponges and consume lots of moisture out of the cookie dough!

See these bananas? And all of those brown spots? When it comes to baking with bananas, brown = amazing! I ? additional speckly bananas because they have so much bright, bold flavor--along with extra natural sweetness! That is the minimum quantity of brown that I suggest. More is even better!
The rest of the cookie dough's sweetness comes from another pure ingredient... Pure maple syrup (like that!) . You want the type that comes directly from maple trees, which is normally sold in skinny glass bottles or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The pancakes include even more natural sweetness! The freshly bought, extra plump, perfectly soft ones are perfect... But for those who have elderly, somewhat dried out carbohydrates (hmm... it sounds silly to explain dried fruit as dried out! ) , that's fine!
Only add them into a microwave-safe bowl, and pour water on top until they're fully covered. Seal plastic wrap across the top, and then microwave the bowl on high for 1 minute. If you let the raisins sit mixing together the cookie dough, then this small hint hydrates them they're exceptionally succulent --and that makes a big difference in these cookies once they're baked!

Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --if they last long!
1 cup (100g) instant oats (fermented if needed and quantified like that )
3/4 cup (90g) whole wheat or gluten-free* flour (measured like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
Using a spoon and spatula, drop the cookie dough into 15 rounded scoops on the sheet, and apply to the desired thickness and width by means Vegan Chocolate Chip Cookies Recipe - BettyCrocker.com of a spatula. Bake in 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to measure both the wheat and oats correctly using this method or even a kitchen scale. (? That is the one I have and adore!) Too much of either could dry out of the cookies and abandon them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or minute oats. They come in huge canisters, just like conservative oats. They're not the ones in the small flavored packets of oatmeal. To make your own, add the same quantity of classic oats to your food processor, and pulse 10-12 times or until the oats will be approximately 1/4 to ? of their initial size.
For the fermented flour, I recommend the following blend: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, 2 tbsp (15g) brown rice bran, and 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if measured check like this.
In case your pancakes are older, drier, and not so plump or juicy... Add them to a microwave-safe bowland pour water at the top till they're completely covered. Seal plastic wrap over the top, and then microwave the bowl on high for 1 minute. Should you allow the peppers sit mixing together the cookie dough, then this small hint hydrates them they're really tender and succulent!
